How we make it
How we make it
Lion's mane grows in bags of sawdust in an ordinary shed, all year and in any weather. The whole method comes down to cleanliness, temperature and humidity, and the first harvest arrives after three to four months.
Space
A 20 m² shed with shelving, a humidifier and ventilation.
Substrate
Hardwood sawdust with bran. We sterilise it so that mould does not take hold.
Mycelium
5% of the substrate by weight. We seal the bags and put them on the shelves.
Incubation
3–4 weeks at 22–24 °C, until the mycelium fills the bag.

How we serve it
How we serve it
Fresh lion's mane is cooked like meat or crab, and that is how restaurants want it. Dried mushrooms and powder keep for a long time and sell through Instagram and health food shops.
