Product
Truffle
An underground mushroom found at the roots of oak, hornbeam and hazel, and the most expensive product of the forest. We do not know whether it grows here. This is an experiment lasting 1–2 years.

What it is
Why it works
- 01
Taste
A strong earthy aroma with notes of nut and garlic. A few grams are enough for a dish.
- 02
Why look for it
If we find one, it will be the first confirmed truffle in our forests. Good news for the press.
- Summer truffle, 1 kg1,500–2,500 BYN
- First incomenot before year 2
How we make it
How we make it
A truffle grows underground and cannot be found without a dog. So the first year goes on training the dog and mapping suitable trees, and only then do the autumn outings begin.
The dog
An ordinary mongrel with a good nose will do. A Lagotto puppy costs up to 600 BYN, but you can manage without one.
Training
Three months of games with truffle oil: we hide a container, the dog finds it and gets a reward. We learn from videos.
Mapping the places
In summer we mark oaks, hornbeams and hazels with almost no grass beneath them. We measure the soil pH: truffles like 7–8.
Searching
From August to November we walk the marked places with the dog two or three times a month.

How we serve it
How we serve it
The first truffle in our forests is worth more as news than as a product, so we are in no hurry to sell it. Until the mushroom is confirmed, everything below is a plan in case we are lucky.

- 01
Show it first
We do not sell the first finds. Press coverage gives the brand more than revenue would.
- 02
Pasta
Thin slices over hot pasta with butter.
- 03
Fried eggs
The simplest way to taste the aroma: eggs, butter and shavings of truffle.
